5 minute chocolate cake

My children love this chocolate cake. They can never get enough of it! So it’s great that it is so simple and quick to make.

We Italians usually have a sweet breakfast and my family is no exception. In the morning on our table there is always a home-baked cake or biscuits and the 5 minute chocolate cake is one of our absolute favourites. A good, sweet start can make a real difference to your day!

This cake is delicious and so easy-to-make that my 5-year-old daughter can almost do it by herself! In 5 minutes (possibly less!) you create the mix, put it in a baking tin, and then straight in the oven for 35 minutes. Super easy!

 Ingredients

  • 200 g self-raising flour + a pinch of baking powder
  • 60 g cocoa powder
  • 180 g sugar
  • 2 eggs
  • 100 ml vegetable oil
  • 200 ml whole milk
  • 1 tsp vanilla extract

For frosting

  • 250 g mascarpone cheese 
  • 300 g Nutella chocolate spread
  • cake decorations

Preheat the oven to 180º and butter a 22 cm round baking tin, dust with flour and tap out the excess. Beat the eggs. Add oil, milk and vanilla extract.

Add dry ingredients: flour, baking powder, sugar and cocoa

Beat until smooth and bake for 35 minutes, until a toothpick inserted into the centre comes out clean.

Cool the cake on wire racks. In a bowl mix mascarpone cheese and Nutella until smooth.

Cut the cake in two halves and spread the frosting. Then put back the top half of the cake.

With a knife spread the frosting on top of the cake. Then decorate with sprinkles, white chocolate flakes, rose petals or any cake decorations of your choice. This cake is great for breakfast, but you can also add a ‘patisserie touch’ with special cake decorations to make it perfect as a dessert or a celebration cake.
