Ricotta and chocolate muffins

I want to share this Italian style muffin recipe, made with ricotta and chocolate chips. My family love them! These muffins are very light and easy to make, great for breakfast or at any time of day.

INGREDIENTS

  • 250 g plain flour
  • 120 g sugar
  • 2 tsp of baking powder
  • 80 ml milk
  • 120 g ricotta
  • 150 g chocolate chips
  • 2 eggs
  • 80 g butter

Heat oven to 200C/180C fan/gas 6. Whisk flour, sugar and baking powder in a large bowl. In another bowl mix together the liquid ingredients: milk, eggs and melted butter. Then add the liquid ingredients to the dried ingredients and mix using an electric mixer until smooth. Add ricotta and chocolate chips.

Mix again and fill a muffin tray with paper cases. Fill them two-thirds full and bake for 15-20 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean.

These ricotta muffins can also be a good dessert option, in which case I recommend a grappa, which is a wonderful Italian tradition of distillate that comes from pomace which I will talk about in depth in my next post.
